Pippin Cake

This is a recipe from Virginia Rider as published in the 1981 California Farm Bureau Womens’ cookbook, “Country Cooking…. California Style.” Virginia was the wife of Bruce Rider and mother of Dick and Jim Rider, all active members of the Santa Cruz County Farm Bureau.

Recipe:

Cake:

Preheat oven to 350°F. Grease a 10 1/2 x 15” jelly roll or similar size pan and sprinkle with flour or sugar. Sift together or mix the flour, baking soda and salt. Beat the eggs well and gradually beat in the sugar. Fold in about half the flour mixture, then the applesauce and vanilla and the rest of the flour. Add the nuts. Spread in pan and bake 30 to 35 minutes or until toothpick comes out clean.

NOTE: Other appleauce may be used but Newtowns are best. Set cake on rack to cool.

Frosting:

Cream together the margarine and cream cheese. Add powdered sugar and vanilla and beat until smooth. Spread on the cake while hot and sprinkle with nuts.

Serves 24 and freezes well.

Cake:
2 eggs
2 cups sugar
2 cups flour
2 tsp. baking soda
1/4 tsp. salt
2 cups newtown pippin applesauce
1 tsp. vanilla
1/2 cp chopped nuts

Frosting:
1 8-ounce package cream cheese, warmed to room temperature
1/4 cup margarine
1 3/4 cups powdered sugar
1 tsp. vanilla
1/2 cup chopped nuts
